About the Producer
|
Even though the Defaix family has a four-generation history of grape growers and winemakers in Chablis, the family has produced wine under their own name only since 1959, when Bernard began his own operation with a tiny 2 hectares of vineyards. Since that time their holdings have increased to 27 ha, with several Premier Cru holdings, as well as Chablis and Petit Chablis vineyards. The entire operation is a family affair, managed by Bernard’s sons Sylvain and Didier, and Didier’s wife Helene. They invested in a study of their soils and terroir to understand best approaches, working for more than a decade with organic and biodynamic methods.
