About the Producer
|
For wines that break from the ordinary and draw a new definition of quality, Bat Gara is a winery to watch. Friends Jose Cruz Guinea, a restauranteur, and Jose Mari´a Gotxi, a winegrower, decided on their collaboration with a shared passion to rediscover the wines of the Spanish Basque region known as Txakolina. In a region traditionally known for simple, slightly effervescent white wines from indigenous varieties, Bat Gara is re-interpreting the varieties and the style of wines. The results are nothing short of extraordinary: from low-yield, high quality fruit, they use minimal intervention and wild fermentations, producing whites that have depth, character and a purity that bring the region into an entirely new focus.

| Gary Hewitt "Bat Gara is the producer name, Txacholi is the wine. It's made from the Basque grape called Hondarribi Zuri. In our market, a spritzy style is more common, but Uno is a complex still wine with salt, lemon, blanched almond, citrus pith, pear, wet stone and sage/fennel flavours. Its high acidity and medium body make it a perfect fit for seafood (even if you're not in San Sebastian). It's a tough call, but Uno may age for several years--it's great right now.
